Pancake Stacks

I was craving a really good pancake this morning and so I decided to make Greek Yogurt Pancakes stacked with apple chips. These pancakes were to die for! I got the recipe from the blog Picklee and I was super impressed with how it turned out! 

So I mixed up my batter, got out the skillet, and I started flipping some pancakes. The first one was definitely my tester but after I tasted it, I knew that these pancakes would be an all time favorite recipe. They were healthy and delicious. 

So I finally got a stack of pancakes to work with and then I alternated putting a layer of pancake and apple chips. The result was really cool because it added some color and crunch to my already fabulous pancakes.

Scones & Coffee

First thing in the morning one of my favorite things to do is sit down outside with a cup of coffee and a fresh baked scone. It is the perfect combination of bitter and sweet to start the morning. While I brainstorming last week about what to make, I decided to make something that is on my favorite list. I decided to make Apple Chip Cinnamon Scones.




The Recipe was found from Naturally Ella, called Apple-Pecan Whole Wheat Scones. The only difference is that we replaced the apples for apple chips.

Pizza: Mamma Mia

I decided to try my luck at pizza. I have heard of people putting apples on pizza before; however, it made me a little bit wary. I decided to experiment, but instead of using fresh apples, I decided to use apple chips. When apple chips are baked again, it allows the moisture seep back in, making them soft and delicious. So I started with a basic simple pizza dough, and then I rolled it out and layered it with fresh Mozzarella. The next layer was apple chips, followed by goat cheese and walnuts.  

I baked it in the oven for about 13 minutes at 400 degrees Fahrenheit. It came out perfectly golden with  the cheeses oozing and the apple chips soft. I added some rosemary leaves as a garnish and it was smelling heavenly! 

I waited a couple of minutes to let it cool, but I was super curious how it was going to taste. So I sliced a piece and bit in. It was absolutely phenomenal. It had a pleasant sweet taste because of the apple chips, with a creamy cheese and complementary flavors. All the pieces came together to make a great combination of pizza heaven. I encourage everybody to try this one.
