Training Days

Heidi and I made a plan to run yesterday. When I went to her dorm room to pick her up, she was definitely asleep. After some time we finally got on the road ( Jack Kerouac Reference? ) It was quite a rough run; however, it was probably one of the most beautiful days, combining that with one of the most outstanding routes. Once we hit 3 miles we started getting into our rhythm. 

And then we hit the hills....

Yes, there were a lot of hills and they were definitely steep. 


we succeeded.  

We ended up running 7 miles, and meeting someone at a breakfast joint! It was definitely a hard run, but Heidi and I felt so good afterwards. Isn't that they best thing about running - the feeling that you get after you run. Four more weeks to go for our Half -Marathon. I think we can do it!

Our First Half Marathon

We have just signed up for a Half Marathon in December! We have both never done a half marathon before. Heidi and I are both a  little nervous, but mostly super excited. We can't wait to train, eat right, and pick out the best outfit to wear for a holiday run! Any suggestions?

It has been awhile since we have been in a race. The last one that the sisters did together was the Portland Race for the Roses and it was a 10K.

This is going to be a great month, as well as a challenging month, but we are both up for the challenge.

Monkey Bread

So the other morning, I was craving something warm and sweet. I decided upon monkey bread, and then I sprinkled some apple chips on top. It was delicious, and lets just say with my friends walking around, it didn't last very long. It actually didn't even last an hour.

This is probably the easier recipe you will ever have. I just bought pillsbury dough boy biscuits, dipped them in butter and covered them in cinnamon. I then sprinkled them apple chips and popped them in the oven for about 10 minutes. I just followed the bake time and temperature on the can.

It was definitely a winner! For a college student it was the perfect study break.

The Season of Fall

It is officially the season of Fall, and we are really excited! Because fall means pumpkin flavored everything, warm tea, sweaters, boots, most importantly apples!

Cinnamon Apple Chips are the perfect addition to the fall season! With their pure apple taste, as well as their crunchiness, and finally the perfect amount of cinnamon - it makes me want to put them in everything.

Trip to Hood River

My sister and I went up to Hood River this past weekend to see the apples in full bloom! It was beautiful up there. Not only were there tons and tons of apples, Mt. Hood was perfectly in the background. It turned out to be a beautiful day filled with laughs, smiles, and great pictures!

Jacky's Apple Chip Oatmeal

Here at our college house, apple chips are a staple in our kitchen. My best friend and roommate has concocted a delicious oatmeal/apple chip combination that not only is healthy, but that is delicious. Another benefit of oatmeal is that it is extremely cheap and for college kids that is a huge win. Its like the tub of oatmeal that never ends.

Meet Jaclyn Simmons,

She is my roommate and a lovely person and here is her recipe for APPLE CHIP OATMEAL!
Prepare to be amazed.

Ingredients: Oats, Flax Seeds, Hemp Hearts, Honey, Peanut Butter, Bananas, and finally Cinnamon Apple Chips

To Make: Mix 1/3 Cup Oats with 1 tablespoon of flax seed, 1 tablespoon of hemp hearts, and 2/3 Cup Almond Milk or Water. Microwave for two minutes and then lit sit for 1 minute.

Toppings: Add peanut butter (as much as desired), honey, sliced banana, and most importantly cinnamon apple chips.

Perfect Morning For French Toast

Waking up this morning, with my coffee brewing the only thing I wanted was French Toast. Thick French Toast that smelled of cinnamon and nutmeg. So that's exactly what I did. French toast is a popular treat in my house so I knew exactly how to make it. I took 2 eggs and 1/2 cup of almond milk, added vanilla, cinnamon, and nutmeg, and then I mixed it all together. I dipped my thick bread in the mixture and cooked it in the stove. It barely took any time because my coffee finished brewing about the same time. Anyway, I love different toppings so I decided to put cinnamon apple chips to give it some crunch and I added some whipped cream. With my coffee, a book, and my French toast, it was a relaxing delicious morning.

Pancake Stacks

I was craving a really good pancake this morning and so I decided to make Greek Yogurt Pancakes stacked with apple chips. These pancakes were to die for! I got the recipe from the blog Picklee and I was super impressed with how it turned out! 

So I mixed up my batter, got out the skillet, and I started flipping some pancakes. The first one was definitely my tester but after I tasted it, I knew that these pancakes would be an all time favorite recipe. They were healthy and delicious. 

So I finally got a stack of pancakes to work with and then I alternated putting a layer of pancake and apple chips. The result was really cool because it added some color and crunch to my already fabulous pancakes.

Scones & Coffee

First thing in the morning one of my favorite things to do is sit down outside with a cup of coffee and a fresh baked scone. It is the perfect combination of bitter and sweet to start the morning. While I brainstorming last week about what to make, I decided to make something that is on my favorite list. I decided to make Apple Chip Cinnamon Scones.

The Recipe was found from Naturally Ella, called Apple-Pecan Whole Wheat Scones. The only difference is that we replaced the apples for apple chips.

Pizza: Mamma Mia

I decided to try my luck at pizza. I have heard of people putting apples on pizza before; however, it made me a little bit wary. I decided to experiment, but instead of using fresh apples, I decided to use apple chips. When apple chips are baked again, it allows the moisture seep back in, making them soft and delicious. So I started with a basic simple pizza dough, and then I rolled it out and layered it with fresh Mozzarella. The next layer was apple chips, followed by goat cheese and walnuts.  

I baked it in the oven for about 13 minutes at 400 degrees Fahrenheit. It came out perfectly golden with  the cheeses oozing and the apple chips soft. I added some rosemary leaves as a garnish and it was smelling heavenly! 

I waited a couple of minutes to let it cool, but I was super curious how it was going to taste. So I sliced a piece and bit in. It was absolutely phenomenal. It had a pleasant sweet taste because of the apple chips, with a creamy cheese and complementary flavors. All the pieces came together to make a great combination of pizza heaven. I encourage everybody to try this one.

Game Night!

Planning our game night! Complete with a scrabble board and excellent snack food. We took caramel corn and mixed it with glazed pecans and cinnamon apple chips. It was a great combination and will be perfect for our upcoming game night!

Turkey Apple Sandwich

Heidi and I were playing with the idea of a sandwich with apple chips. I have had turkey apple sandwiches before at restaurants so I was curious to see if a turkey apple chip sandwich would be good. I was blown away at how good this was. It is the perfect blend of sweetness and crunch to a normal turkey sandwich.

We started with a ciabatta roll added some avocado, spinach, a couple layers of turkey, havarti cheese, and finally to top it off we added apple chips. Once I took a bite into it, I was hooked. It is definitely a favorite in our house!

Cinnamon Apple Chip Oatmeal Cookies

We got our recipe from Joy the Baker  for Cinnamon Apple Oatmeal Cookies but we just replaced the fresh apples for apple chips. The recipe was marvelous and the cookies went quickly in our household. The apple chips were the perfect addition to the recipe, giving it a natural tartness.

With a glass of almond milk, they are the perfect treat on any day!

Apple Chip Cinnamon Buns

Here are a couple of pictures from our latest experiment, apple chip cinnamon rolls. They turned out absolutely delicious. We used the recipe from 101 Cookbooks, Cinnamon Buns Recipe, but we had to tweek it by rolling up the rolls individually so we could stuff them with delicious apple chips. The turned out beautifully!

Our first ever appletizers! We took whole wheat crostini and spread goat cheese on them. We added the strawberry and apple chips for garnish, color, and flavor. The mixture of the tart goat cheese with the natural sweetness of the apple chip, along with a slight strawberry flavor, would be a great appetizer for any party. There were absolutely delicious!

Our Apple Chip Waldorf Salad

We have been experimenting in the kitchen with our flavorful apple chips, and we have come up with our very own Apple Chip Waldorf Salad. We used fresh spinach and romaine lettuce. We added blueberries, pecans, and apple chips, and then we topped it with a beautiful raspberry vinaigrette. The apple chips were the perfect addition to the salad, giving it a flavorful crunch to an already tasty salad!
